The Rare Barrel Across The Sea 750ml SOUR
Tasting Notes – lightly tart with moderate saison yeast expression subtle bready character, with undercurrents of citrus and a touch of brine. One of our most balanced beers in acidity and yeast expression… don’t let the coriander and sea salt scare ya on this one!
Fermentation – This blend consists of multiple batches of saison and sour beer. The majority of these batches were fermented with Saccharomyces yeast in primary and later inoculated with various Brettanomyces strains. A portion of these non-sour barrels developed some acidity after aging in oak barrels for over 6-9 months. This mildly tart portion was then blended with a batch of sour barrels that were fermented with DuPont saison yeast in primary and then racked into unrinsed barrels that previously housed Brettanomyces bruxellensis var. Drei and Pediococcus damnosus.
A blend of golden sour beers aged in oak barrels with coriander and sea salt, this beer has whispers of a style almost lost in time. Fermented and soured with a medley of microorganisms, across the sea is where you’ll find the undercurrents of citrus and tides of brine that flow to a bay of liquid gold.
