A blend of golden sour beers aged in oak barrels with peaches, cinnamon, and vanilla beans
Tasting Notes – With aromas of French toast, followed by notes of grilled peaches and a dash cinnamon, this beer reminds us of freshly baked peach cobbler. This beer displays a low to medium acidity and a dry finish.
Fermentation – This batch of Home, Sour Home is a blend of 3 different batches of golden sour beers aged in oak barrels. The first portion of this blend was fermented with English Ale yeast, various strains of Brettanomyces, and Pediococcus bacteria. We then blended this batch with barrels of golden sour beer that were only fermented with Brettanomyces yeast and Pediococcus bacteria. The final component to this blend was a golden sour beer that was fermented with English Ale yeast and then racked into unrinsed barrels that previously housed Brettanomyces bruxellensis var. Drei yeast and Lactobacillus delbrueckii bacteria.
